Cook over high heat until onion is soft, stirring often. Add pepper and cilantro and cook 3 more minutes, stirring often. Add tomatoes, oranges, beans, coriander and cumin. Cover loosely and simmer 15-20 minutes. Serve with brown rice.<\/p>\n<\/div>\n<\/div>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-7387b849 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:66.66%\">\n<h5 class=\"wp-block-heading\">Yam and Corn Chowder<\/h5>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 large or 2 small yams<\/li>\n\n\n\n<li>2 T coconut milk<\/li>\n\n\n\n<li>1 onion chopped<\/li>\n\n\n\n<li>2 garlic cloves minced<\/li>\n\n\n\n<li>1 t curry powder (without ginger and pepper)<\/li>\n\n\n\n<li>\u00bd t coriander<\/li>\n\n\n\n<li>\u00bd t salt<\/li>\n\n\n\n<li>1 t sweetener<\/li>\n\n\n\n<li>2 c water or vege stock<\/li>\n\n\n\n<li>2 c soymilk<\/li>\n\n\n\n<li>1 15 oz can corn, undrained<\/li>\n\n\n\n<li>1 T lemon juice<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Scrub yam and cut into \u00bd in cubes. Heat coconut milk in large pan, add onion and garlic, cook till soft. Add curry powder, coriander, and salt. Cook 2 min, stirring constantly. Add sweetener, water and yams, simmer till yams are done, about 15 min. Blend in small batches, adding soymilk to each batch. Return to pot and add corn and liquid, cook over med heat till hot\u2014do not boil.
